I just recently added the second CPU to the servers because they were consistently slow (some files were taking over an hour to save) so that has helped a lot. As for the memory, that is a possibility even though I am seeing no evidence of memory being the actual problem (WIn2k8, swap not in excessive use, guest not swapping in VMware). I can give that a go once I get approval to take it down (possible tonight).
My concern with adding more CPU resources to these servers is ready time. Ready summation is already averaging 148ms on the one server seeing only 200 active users. I believe adding a CPU would cause ready time to explode.
